Yesterday was Lacey’s third birthday. I still can’t believe she is three. She had three friends (<--all boys) come over for lunch and then we had a family party in the evening. I tried to keep it simple this year. The theme was Curious George which was her idea. Not super girly but then again Lacey has turned into a little tomboy. However, she is a tomboy who loves to wear dresses which is extra fun.
Lacey’s little party is hardly blog worthy compared to most parties in blogland. I didn’t make the decor or create the invitations. I do think though that it was just what she wanted.
I made her an ice cream cake because Lacey did not like the cake I made for her first two birthdays. She simply does not like cake. I’m not sure how she can be my child and not like cake. If she wasn’t my mini-me I’d seriously think there was a mix-up at the hospital. Who doesn’t like cake?
Lacey does have my appetite. She ate two huge slices of pizza in addition to a plate full of snack food and fruit. Hopefully, she gets my insanely good metabolism too. <-- don't hate on the skinny girl
I made blueberry muffins (from the box- that counts, right?) yesterday morning and I thought Ms. Lacey would be super excited. Well, she took one bite and said, “I want a real blueberry muffin.” Umm… huh? ”Like the kind Daddy gets.” Yep, she wanted a grocery store muffin. That is what I get for waking up 45 minutes early to make muffins.
I didn’t want to have cake twice in one day so I did ice cream treats for her friends at lunch. Check out my creation.
I rolled mini ice cream sandwiches in sprinkles. Fun, easy and cute. The kids loved them. They were super excited about the sprinkles. Who am I kidding? I love sprinkles too.
Not exactly tutorial worthy but here is a pic of the process.
Let ice cream sandwiches soften for a few minutes. Fill a plate with sprinkles. Roll the ice cream sandwiches in the sprinkles. Eat. Yum.























Happy Birthday Lacey! I love the idea of rolling ice cream sandwhiches in sprinkles! very cute. And, I am one of those people like your daughter who doesn’t like cake (I know, I am weird). I like cupcakes though! (yes, I know they are basically the same thing as cake, but for some reason I don’t like cake) Anyways, growing up, my mom would always make a pan of brownies on my birthday & we would have brownies & ice cream for my birthday dessert!
