Ice Cream Cake

As promised (one day late)… an ice cream cake how-to.  I got the idea from Chris @ Just Beachy.   She made a fabulous ice cream cake for her daughter.  I’m not the cake expert that she is but I followed her directions and I feel like it turned out pretty well.  Lacey liked it which was the goal.  I thought it was yummy!

I used a springform pan.  Mine was 9 inches which made a pretty large cake.  I think next time I might use a 7 inch pan.

Line the pan in plastic wrap.  Add your first flavor of ice cream.  I used vanilla first.  I used a pint b/c they were way on sale.  I let it soften for 20 minutes and then pressed it into the pan with my ice cream scoop.

After freezing the vanilla layer for 30 minutes I added a hot fudge layer (not pictured).  I used a whole jar.
My second layer was Moose Tracks.  I chose that simply b/c it is my favorite ice cream.  Lacey likes it too.  I used a gallon.  I then covered it with crushed chocolate wafers.  Oreos would work well too.
My final layer was chocolate chocolate chip.  I used a pint. 

After freezing overnight I took it out and released the sides of the pan.  I tucked all the plastic wrap under the bottom of the remaining part of the pan.  Now it is time to frost the cake!

The frosting is two cans of Betty Crocker vanilla and a big container of Cool Whip. I folded the two together with a spatula.  Made for a light, creamy icing.  I spread the frosting quickly and then put the cake back in the freezer.

I colored a small amount of purple and blue icing for the piping bags.  Not exactly professional looking but not bad for an amateur.  I don’t have much experience piping icing so I was learning on the fly.  You have to do it quickly b/c you don’t want it to melt.

Basically you can use as much ice cream as you want and choose as many flavors as you want.  I did mine based on what was on sale at the store over a 2 week period.  FYI – Every time I added an ice cream layer to the cake I stuck it in the freezer for at least 30 minutes.

Mission accomplished – ice cream cake with sprinkles and a monkey as requested.
